- Vanilla Panna Cotta with Chocolate
- (Panna Cotta alla Vaniglia e Cioccolato)

- Ingredients:
-
3 sheets of gelatin
1/2 cup (120 ml) milk
2 cups (500 ml) heavy cream
1/2 cup (60 grams) sugar
1 vanilla bean, slit lengthwise
4 oz (100 grams) dark chocolate
3/4 cup (200 ml) heavy cream (for the dark chocolate)
Directions:
Fill a bowl with water and add the gelatin.
Let is soak.
Pour the milk into a pan and bring to just below simmering.
Remove the pan from the heat (Do not let it boil).
Drain and squeeze out the gelatin and add it to the milk.
Pour the cream into another pan.
Add the sugar and vanilla bean and bring to a boil over low heat, stirring constantly.
Remove the pan from the heat.
Remove the vanilla bean and stir in the milk mixture.
Pour the mixture into any kind of ramekin, mold, cup, you prefer.
Rinse your glass in ice-cold water, shaking out any excess water and fill with the milk mixture.
Chill in the refrigerator for several hours until it sets (at least 3-4 hours).
In a double boiler melt the dark chocolate.
Once the chocolate is completely melted, slowly whisk in the cream until the desired consistency is reached.
Turn out the panna cotta onto a serving dish and drizzle the chocolate sauce over the top. Serves 8.
