Apple Flan
(Torta di Mele)
 
 
Ingredients:
 
1 cup natural yogurt
5 ounces plain white flour
4 ounces sugar
3 eggs
3 tbsp extra virgin olive oil
One lemon
Two teaspoons powered yeast
Six apples


Directions:
 
In a large bowl mix together the yogurt, flour, sugar, eggs, olive oil, grated lemon rind, yeast and four of the apples, peeled and chopped finely.
 
Grease and flour a cake tin and put the remaining sliced apples in the bottom.
 
Sprinkle with lemon juice and sugar.
 
Pour the mixture on top and put in the oven to cook at 350 F (180 C) for 30 minutes.
 
Sprinkle the surface with icing sugar before serving if liked.
 
This flan is delicious just slightly warm but it can also be eaten hot with vanilla ice cream.
