Tagliolini with Lemon
Tagliolini with Lemon
(Tagliolini al Limone)
 
 
Ingredients:

Zest and juice of 1 large organic lemon
50 grams butter
1 tablespoon extra virgin olive oil
50 grams of creamy goat cheese (caprino) or a dash of cream
2 small dried chillis
Grated Parmigiano cheese
250 grams of fresh Tagliolini or linguine pasta (for dry pasta, 90 grams per person)
Parsley
Salt and freshly ground black pepper to taste 

Directions:

Prepare a large pot of water for the pasta.

When the water begins to boil, add salt and pasta (for fresh pasta, only cook for a few minutes).

Place the butter and olive oil over a medium heat. When the butter begins to melt, add the zest of the lemon and let cook for about a minute (do not let the lemon burn).

Add about half a cup of the boiling pasta water along with the lemon juice.

Let simmer for two minutes.

Add the goat cheese (or cream if using) and a tablespoon of the pasta water and let melt.

Taste and season as needed with the chilli, salt and white pepper.

Add the cooked pasta to the sauce and toss to coat.

Garnish with chopped parsley and Parmigiano cheese. Serves 2.
