- Spaghetti with Zucchini
- (Spaghetti Con Le Zucchine)

- Ingredients:
-
12 oz (350 grams) zucchini, thinly sliced
3 plum tomatoes, peeled, seeded and chopped
5 oz (150 grams) mozzarella cheese, diced
1 celery stick
3 tablespoons extra virgin olive oil
1 garlic clove
1 small onion
2 fresh sage leaves
12 oz (350 grams) spaghetti
1 oz (25 grams) Parmigiano cheese, freshly grated
Salt and pepper
Directions:
Heat the olive oil in a pan.
Add the garlic clove, whole onion, celery stick and sage leaves and cook over a low heat for about 5 minutes.
Add the tomatoes and bring to a boil over a medium heat.
Add the zucchini.
Season with salt and pepper.
Cover and cook for 15 minutes.
Remove the onion, garlic, celery and sage.
Cook the spaghetti in a large pan of salted water until 'al dente'.
Drain and return to the pan.
Toss with the sauce, mozzarella and Parmigiano cheeses and serve. Serves 4.
