Milk Pot Roast
Milk Pot Roast

Ingredients:

1 and 3/4 lb (800 grams) boneless breast of veal
Plain flour, for dusting
3 tablespoons extra virgin olive oil
1 and 1/2 oz (40 grams) butter
About 1 and 3/4 pints (1 liter) milk
Salt and pepper 

Directions:

Tie the veal neatly with kitchen string and dust lightly with flour.

Heat the olive oil and butter in an oval saucepan, add the meat and cook, turning frequently, until browned all over.

Meanwhile, heat 6 fl oz (175 ml) of the milk until it is lukewarm.

Season the veal with salt and pepper, pour in the warm milk, bring to just below simmering point and add as much of the remaining milk as required to cover the meat completely.

Simmer over a medium heat for about 1 hour.

Remove the veal from the pan, leave to stand for 10 minutes, then untie and slice.

Place on a warm serving dish and spoon the cooking juices over the meat. Serves 6.
