Lobster In Tarragon Sauce
Lobster In Tarragon Sauce
(Aragosta In Salsa di Dragoncello)
 
 
Ingredients:

Two (1 and 3/4 lb) (800 grams) spiny lobsters, boiled
1 fresh tarragon sprig, finely chopped
1 onion, finely chopped
1 celery stick, finely chopped
1 carrot, finely chopped
3 and 1/2 oz (100 grams) butter
2 fl oz (50 ml) brandy
1 teaspoon herb mustard
6 fl oz (175 ml) dry white wine
Juice of 1/2 lemon, strained
Salt and pepper 

Directions:

Cut open the lobsters.
 
Remove the meat, reserving the coral and tomalley.

Melt 2 oz (50 grams) of the butter in a pan.
 
Add the onion, carrot and celery and cook over a low heat, stirring occasionally, for about 5 minutes.

Add the lobster meat and cook until lightly browned, then season.

Add half the brandy and cook until has evaporated.
 
Add the tarragon and mustard.

Pour in wine, cover and simmer for about 10 minutes.

Remove the pan from heat.
 
Transfer the lobsters to a plate and keep warm.

Strain cooking liquid into a clean pan.

Chop the tomalley and coral.
 
Add to the pan with the remaining butter, remaining brandy and lemon juice.

Cook over a medium heat until slightly reduced, season.

Serve the lobsters covered with the sauce. Serves 4.
