Chocolate Souffle
Chocolate Souffle

Ingredients:

1/2 oz (15 grams) unsalted butter, plus extra for greasing
Vanilla sugar, for dusting
3 oz (80 grams) plain chocolate, broken into pieces
1/2 pint (300 ml) milk
1 and 1/4 oz (35 grams) plain flour
2 oz (50 grams) caster or superfine sugar
3 egg yolks
1 egg white 

Directions:

Preheat the oven to 200C (400F) Gas Mark 6.

Grease a souffle dish with butter and dust with vanilla sugar.

Put the chocolate and 6 fl oz (175 ml) of the milk in a heatproof bowl set over a pan of barely simmering water and stir constantly until the chocolate has melted and the mixture is smooth.

Put the flour in another saucepan, pour in the remaining milk and mix well.

Stir in the sugar and chocolate mixture, bring to the boil and cook, stirring constantly, for 2-3 minutes.

Remove from the heat and leave to cool slightly, then stir in the butter, then the egg yolks one at a time.

Stiffly whisk the egg white in a grease-free bowl and gently fold it into the mixture.

Spoon the mixture into the prepared dish so that it is two-thirds full and bake for about 30 minutes until risen and set.

Serve immediately. Serves 6.
