Chicken Breasts In Almond Sauce
Chicken Breasts In Almond Sauce
(Petti Di Pollo In Salsa Di Mandorle)
 
 
Ingredients:

1 and 1/2 oz (40 grams) butter
4 skinless, boneless chicken breast portions
Juice of 1/2 lemon, strained
1 and 1/2 oz (40 grams) almonds, chopped
1 garlic clove, crushed
1 onion, thinly sliced
2 fl oz (50 ml) dry white wine
2 tablespoons chopped fresh flat-leaf parsley
Salt and pepper 

Directions:

Melt half the butter in a frying pan, add the chicken and cook over a low heat, turning occasionally, until lightly browned on both sides.

Add the lemon juice, season with salt and pepper, cover and cook for 20 minutes.

Remove the chicken from the pan and add half the remaining butter, the almonds, garlic and onion.

Cook, stirring occasionally, until the almonds have browned, then add the remaining butter, pour in the wine and cook until it has evaporated.

Return the chicken to the pan and heat through.

Transfer the chicken to a warm serving dish, spoon the sauce over it and sprinkle with the parsley. Serves 4.
