 Cookie of the Week: Whole Pistachio Cookies

"Whole Pistachio" Cookies: Dedicated to pistachio lovers! A soft and chewy pistachio cookie made from whole pistachios, egg whites from the freshest farm eggs, flour, and sugar. No preservatives, additives, artificial colors, nor flavors. 900 grams (2 lbs.) Serves 5-7.

 Recipe: Caprese Salad with Buffalo Milk Mozzarella

Caprese Salad with Buffalo Milk Mozzarella
Caprese di Mozzarella di Bufala


11 oz (300 grams) buffalo milk mozzarella cheese
3-4 tomatoes, peeled, seeded and sliced
10 fresh basil leaves
Extra virgin olive oil, for drizzling


Drain the mozzarella and cut into 1/8 inch (3 mm) thick slices.

Arrange the mozzarella and tomato slices alternately in rings on a serving dish.

Sprinkle with the basil leaves.

Drizzle with olive oil and season with salt.

Keep in a cool place until it's ready to serve. Serves 4.

 Recipe: Sardine Rolls

Sardine Rolls
Involtini di Sardine


1 and 3/4 lbs (800 grams) sardines, scaled, cleaned and boned
4 oz (120 grams) pancetta, thinly sliced
1-2 tablespoons extra virgin olive oil, plus extra for brushing
2 bay leaves
1 fresh thyme sprig
Juice of 1 lemon, strained
Salt and pepper


Preheat the oven to 180C (350F) Gas Mark 4.

Brush an oven proof dish with olive oil.

Season the sardines with salt and pepper.

Wrap each in a slice of pancetta and secure it with a cocktail stick or toothpick.

Place the rolls in the prepared dish.

Add the bay leaves and thyme and pour in the lemon juice and olive oil.

Bake for about 14-16 minutes. Serves 4.

 Recipe: Black Risotto with Cuttlefish

Black Risotto with Cuttlefish
Risotto Nero con Le Seppie


For the Fish Stock:
2 and 1/4 lbs (1 kg) white fish (or white fish heads and bones with the gills removed)
1 onion, chopped
1 carrot, sliced
1 celery stick, sliced
1 fresh thyme sprig
1 fresh flat-leaf parsley sprig
1 tablespoon black peppercorns, moderately crushed

For the Risotto:
2 and 1/4 lbs (1 kg) cuttlefish, cleaned and ink sacs reserved
12 oz (350 grams) risotto rice
1 small onion, chopped
1/2 garlic clove, chopped
1 oz (25 grams) butter
3 tablespoons extra virgin olive oil
6 fl oz (175 ml) dry white wine
Salt and pepper


Prepare the Fish Stock:
Pour 3 pints (2 liters) of water into a large saucepan, add the onion, carrot, celery, herbs, and peppercorns and season with salt.

Gradually bring to a boil, then lower the heat and simmer for about 30 minutes.

Remove from the heat, leave to cool, then add the fish (the water should just cover the fish).

Return to the heat, bring just to a boil, then lower the heat and simmer for another 20-25 minutes.

Remove from the heat and let the fish cool in the stock for a stronger flavor.

Strain the stock.

Leave to cool slightly, then strain.

Prepare the Risotto:
Cut the cuttlefish into thin strips.

Bring the fish stock to a boil.

Meanwhile, heat the olive oil in another saucepan.

Add the onion and garlic and cook over a low heat, stirring occasionally, for about 5-6 minutes.

Add the cuttlefish.

Season with salt and pepper to taste and cook for a few minutes.

Pour in the wine and 1/4 pint (150 ml) water and simmer over a low heat for about 20 minutes.

Stir in the rice and cook for a few minutes.

Add the hot fish stock and the cuttlefish ink and cook for a another 20 minutes until the rice and cuttlefish are tender and the liquid has been absorbed.

Stir in the butter and serve. Serves 4.

Berlusconi Inspires An Angry Bunga-Bunga App

Rome - June 17, 2011 - Silvio Berlusconi's notorious bunga bunga parties are the inspiration for a new Angry Birds style game.

Angry Bunga features a cartoon version of the Italian PM throwing money at a beautiful girl in a cage.

In the application, available for iPhone, iPad and Android, he also walks along the Bay of Naples throwing bananas and tomatoes at a judge.

If Berlusconi hits a magistrate, he disappears, but if he hits the girl, she strips off and throws him a kiss.

The game was developed by the Italian Appymob agency and has been available since the start of the week.

Silvio, bunga, unga, asbestos hair plugs..."ma, che vita." You have no idea how really tired we're getting of this; our lives and future hang in the hands of a public employee who is depriving a village somewhere of a clown.

Quite frankly, the app doesn't sound entertaining. No creativity, no imagination, no surprises. Why do we always have to give suggestions to everyone out there?

How about a "Beat the Arrogant Italian Clown" app? A cartoon version of Berlusconi receiving a beating, clown style, every time he makes a blunder (feel free to credit us with the idea):

- November 2010: "As always, I work without interruption and if occasionally I happen to look a beautiful girl in the face, it's better to like beautiful girls than to be gay."
App feature:
Have gays strangle him with his string of tied handkerchiefs while messing up his clown make up.

- October 2010: A video emerges of Berlusconi describing a fictional Jewish family agreeing to hide another Jew during the Holocaust, on condition that he pays 3,000 euros a day. He describes a member of the family asking another: "Do you think we should tell him that Hitler is dead and the war is over?"
App feature:
Have Jews pop his big red nose and spray him with seltzer until he drowns.

- April 2009: Berlusconi yells out "Mr Obama!" after an official photo call in London's Buckingham Palace during a meeting of G20 leaders. Queen Elizabeth asks: "Why does he have to shout?"
App feature:
Have the Queen shove his big shoes down his throat and choke him.

- April 2009: During a visit to survivors of an earthquake in the central Abruzzo region, who were staying in emergency tents, Berlusconi says: "They should see it like a weekend of camping."
App feature:
Have the survivors suffocate him in his little clown car.
